辣薄荷在不同收割期，油组分（特别是薄荷呋喃）含量和得油率的变化。并得出辣薄荷的最佳收割期应在主茎10％花蕾开花期到主茎30％的花蕾开花期，油的质量较好，得油率较高。

Yield and quality of essential oil (especially menthofuran) of Merttha piperita obtairzedat different period of harvest were studied. Results showed that the optimum time for harvesting was when the buds reached about 10 to 3000 of the stem.Both the yield and quality of essential oil of M.piperita obtained at that time were at their hest.
